Spring rolls, prawn crackers and house special chow mein are largely influenced by Hong Kong cuisine. Not that that\u2019s necessarily a bad thing, food from Hong Kong is equally as delicious as some of the meals I\u2019ve come to know and love in China.<\/p>\n\n\n\n<p>Although many of you may have already visited China and tasted some of the cuisines, I\u2019d first like to introduce you to some of the basic ingredients that are commonly found in a Chinese meal.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Basic Chinese Ingredients<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Rice<\/h3>\n\n\n\n<p>Rice is the obvious staple of Chinese cuisine. Chinese people will usually consume rice at least once a day and almost every household owns the essential rice maker. White rice is prevalent in the South of China and is also used to make other products such as noodles and the infamous rice wine, <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E7%99%BD%E9%85%92&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u767d\u9152<\/a> Bai jiu.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vegetables<\/h3>\n\n\n\n<p>China has a plethora of vegetables (and fruits), especially grass type veggies that look similar. Garlic, spring onions and chives are also very popular. Some interesting vegetables include <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=bitter%20melon&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u82e6\u74dc<\/a> (k\u01d4 gu\u0101) bitter melon and aubergine aka (eggplant) <a href=\"https:\/\/dictionary.writtenchinese.com\/worddetail\/qiezi\/9066\/3\/1\" target=\"_blank\" rel=\"noopener noreferrer\">\u8304\u5b50<\/a> (qi\u00e9 zi). Seaweed, although not a vegetable, is added to soups and dishes and eaten like one.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Noodles<\/h3>\n\n\n\n<p>Noodles are more popular in the North of China and come in many shapes and sizes (more than you ever imaged!) and served hot, cold, and with or without soup.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Tofu and Soy Beans<\/h3>\n\n\n\n<p>Being in China was the first time I was seriously introduced to this phenomenon known as Tofu. Unlike in the West where Soy is reserved for health nuts and the lactose intolerant among us, soy and tofu is available in all forms including drinks, dishes and sauces (soy sauce). It is, of course, a great source of protein, just watch out for the delightfully stinky tofu <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E8%87%AD%E8%B1%86%E8%85%90&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u81ed\u8c46\u8150<\/a> (ch\u00f2u d\u00f2u fu)\u2026<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Spices and Herbs<\/h3>\n\n\n\n<p>There are some great spices in China, including the amazing <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E9%BA%BB%E8%BE%A3&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u9ebb\u8fa3<\/a> (m\u00e1 l\u00e0) or \u2018hot and numbing\u2019 <a href=\"https:\/\/dictionary.writtenchinese.com\/worddetail\/huajiao\/16776\/3\/1\" target=\"_blank\" rel=\"noopener noreferrer\">\u82b1\u6912<\/a> (hu\u0101 ji\u0101o) commonly known as the Sichuan pepper. Other spices and herbs commonly used in Chinese food are ginger, coriander and cloves.<\/p>\n\n\n\n<p>Chamcen and I have chosen the following 10 popular Chinese dishes because they are traditional, delicious and meals everyone should experience in China (and maybe at home, but that&#8217;s another article!). The meals are from all over China, and cater to different tastes and use ingredients indigenous to those areas.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Popular Chinese Dishes<\/h2>\n\n\n\n<h2 class=\"wp-block-heading\"><a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E5%9B%9B%E5%B7%9D&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u56db\u5ddd<\/a> (s\u00ec chu\u0101n) &#8211; Sichuan<\/h2>\n\n\n\n<p>Sichuan province, located in southwest China, is known for the <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E8%8A%B1%E6%A4%92&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u82b1\u6912<\/a> (hu\u0101 ji\u0101o) or Sichuan pepper. Sichuan cuisine is known for its strong flavours and spices including star anise, garlic and ginger.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"498\" height=\"314\" src=\"https:\/\/i0.wp.com\/www.writtenchinese.com\/wp-content\/uploads\/2015\/09\/090b329088e0eec8992781d41414fd68-e1461743117436.jpg?resize=498%2C314&#038;ssl=1\" alt=\"Hot and Numbing Hot Pot Chinese Dish\" class=\"wp-image-4234\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">1. <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E9%BA%BB%E8%BE%A3%E7%81%AB%E9%94%85&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u9ebb\u8fa3\u706b\u9505<\/a> (m\u00e1 l\u00e0 hu\u01d2 gu\u014d) &#8211; Hot and Numbing Hot Pot<\/h3>\n\n\n\n<p>Hotpot is both delicious, versatile and one of my favourite Chinese dishes! Sharing one big pot makes the meal even more communal than dining in China already is. A \u2018sauce\u2019 or soup, sometimes split in two to cater to different tastes, is put in the centre of the table and your ingredients are added and left to cook. The genius of hotpot, in my opinion, is that it seems ANYTHING can be added to the dish! Meatballs, fishballs, potato, mushrooms, lettuce, tofu, thinly sliced meats, dumplings, noodles and shellfish just to name a few! Once the ingredients are cooked, you use your chopsticks or a spoon to take out what you want to eat and dip it into your \u2018customized\u2019 sauce. You can even drink the \u2018soup\u2019 at the end of the meal (although this is not recommended with \u9ebb\u8fa3\u706b\u9505 (m\u00e1 l\u00e0 hu\u01d2 gu\u014d)) In Guangdong, people drink the soup at the beginning of a meal instead! Amazing. Now I\u2019m going to get me some hotpot!<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"498\" height=\"285\" src=\"https:\/\/i0.wp.com\/www.writtenchinese.com\/wp-content\/uploads\/2015\/09\/mapotofu-e1461743286336.jpg?resize=498%2C285&#038;ssl=1\" alt=\"Ma Po Tofu Chinese Dish\" class=\"wp-image-4228\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">2. <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E9%BA%BB%E5%A9%86%E8%B1%86%E8%85%90&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u9ebb\u5a46\u8c46\u8150<\/a> (m\u00e1 p\u00f3 d\u00f2u f\u01d4) &#8211; mapo tofu \/ stir-fried beancurd in chili sauce<\/h3>\n\n\n\n<p>Since I\u2019m not a huge lover of tofu, this really isn\u2019t my cup of tea, but this dish is available as a staple on menus and I have seen this dish A LOT! \u9ebb\u5a46 (m\u00e1 p\u00f3) translates to \u2018pockmarked grandmother&#8217; (yummy!) and consists of tofu cooked in a chilli-bean sauce. Minced meat is often added to complete the dish.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"498\" height=\"314\" src=\"https:\/\/i0.wp.com\/www.writtenchinese.com\/wp-content\/uploads\/2015\/09\/sichuanchicken-e1461743463136.png?resize=498%2C314&#038;ssl=1\" alt=\"Sichuan Chicken Chinese Dish\" class=\"wp-image-4230\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">3. <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E5%AE%AB%E4%BF%9D%E9%B8%A1%E4%B8%81&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u5bab\u4fdd\u9e21\u4e01<\/a> (g\u014dng b\u01ceo j\u012b d\u012bng) &#8211; Kung Pao Chicken<\/h3>\n\n\n\n<p>Another great dish from Sichuan. A combination of chicken, peanuts and chilli (of course), this dish is thought to be named after the Governor of Sichuan during the Qing Dynasty. Of course, you\u2019ve probably seen a less spicy but similar dish in your local Chinese restaurant.<\/p>\n\n\n\n<p>Other Sichuan dishes to try include <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E5%9B%9E%E9%94%85%E8%82%89&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u56de\u9505\u8089<\/a> (hu\u00ed gu\u014d r\u00f2u) &#8211; Twice cooked pork and <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E9%B1%BC%E9%A6%99%E8%82%89%E4%B8%9D&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u9c7c\u9999\u8089\u4e1d<\/a> (y\u00fa xi\u0101ng r\u00f2u s\u012b) &#8211; Pork strips with Fish Sauce<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E5%B9%BF%E4%B8%9C&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u5e7f\u4e1c<\/a> (gu\u01ceng d\u014dng) &#8211; Guangdong<\/h2>\n\n\n\n<p>Guangdong cuisine known as <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E7%B2%A4%E8%8F%9C&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u7ca4\u83dc<\/a> (yu\u00e8 c\u00e0i) is known for having a light flavour and similar to dishes found in Hong Kong.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"498\" height=\"313\" src=\"https:\/\/i0.wp.com\/www.writtenchinese.com\/wp-content\/uploads\/2015\/09\/7120c6db6b5e0c35e20dfe0f7071cffb-e1461743624739.jpg?resize=498%2C313&#038;ssl=1\" alt=\"Barbecue Pork\" class=\"wp-image-4236\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">4. <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E5%8F%89%E7%83%A7&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u53c9\u70e7<\/a> (ch\u0101 sh\u0101o) &#8211; char siu\/barbecued pork<\/h3>\n\n\n\n<p>I\u2019m drooling just thinking about those delicious \u53c9\u70e7\u5305 (ch\u0101 sh\u0101o b\u0101o) Barbecue pork buns. They\u2019re so good, Nora even has a song about them! \u53c9\u70e7\u5305 (ch\u0101 sh\u0101o b\u0101o) are commonly served as dimsum and are made by steaming dough and creating a bun or &#8216;bao&#8217; with the chashao meat inside. The meat itself is slow roasted pork cooked in a sweet mix of oyster and hoisin sauces as well as vinegar and sesame oil. You might have come across this dish in the west, although it often takes the Cantonese pronunciation char siu.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"498\" height=\"318\" src=\"https:\/\/i0.wp.com\/www.writtenchinese.com\/wp-content\/uploads\/2015\/09\/whitecutchicken-e1461743670667.png?resize=498%2C318&#038;ssl=1\" alt=\"White Cut Chicken Chinese Dish\" class=\"wp-image-4232\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">5.<a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E7%99%BD%E5%88%87%E9%B8%A1&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\"> \u767d\u5207\u9e21<\/a> (b\u00e1i qi\u0113 j\u012b) &#8211; Cantonese poached chicken, known as &#8220;white cut chicken&#8221;<\/h3>\n\n\n\n<p>White Cut Chicken is a kind of <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E7%83%A7%E5%91%B3&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u70e7\u5473<\/a> (sh\u0101o we\u00ec) dish which is boiled in a chicken broth with ginger and often served rare, on the bone and cut into strips. A tangy dipping sauce is usually brought with it, which is a mix of ginger, spring onions and peanut oil. Yummy!<\/p>\n\n\n\n<p>Another Guangdong dish to try is <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E8%82%A0%E7%B2%89&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u80a0\u7c89<\/a> (ch\u00e1ng f\u011bn).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E4%B8%8A%E6%B5%B7&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u4e0a\u6d77<\/a> (sh\u00e0ng h\u01cei) &#8211; Shanghai<\/h2>\n\n\n\n<p>Sugar is an important ingredient in Shanghai cuisine and is often mixed with soy sauce. Seafood is also a staple, especially Shanghai hairy crab <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E4%B8%8A%E6%B5%B7%E6%AF%9B%E8%9F%B9&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u4e0a\u6d77\u6bdb\u87f9<\/a> (sh\u00e0ng h\u01cei m\u00e1o xi\u00e8).<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"479\" height=\"319\" src=\"https:\/\/i0.wp.com\/www.writtenchinese.com\/wp-content\/uploads\/2015\/09\/ace5a33a9c52a9b881c627d7b145cb47-e1461743753603.jpg?resize=479%2C319&#038;ssl=1\" alt=\"Xiao Long Bao Chinese Dish\" class=\"wp-image-4237\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">6. <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E5%B0%8F%E7%AC%BC%E5%8C%85&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u5c0f\u7b3c\u5305<\/a> (xi\u01ceo l\u00f3ng b\u0101o) &#8211; Steamed dumplings<\/h3>\n\n\n\n<p>I&#8217;m a massive fan of <a href=\"https:\/\/dictionary.writtenchinese.com\/worddetail\/jiaozi\/4966\/3\/1\" target=\"_blank\" rel=\"noopener noreferrer\">\u997a\u5b50<\/a> (ji\u01ceo zi) or dumplings and \u5c0f\u7b3c\u5305 (xi\u01ceo l\u00f3ng b\u0101o) are the speciality dumpling of Shanghai. They are made differently to the normal \u997a\u5b50 (ji\u01ceo zi) that you may have come across and are more similar to <a href=\"https:\/\/dictionary.writtenchinese.com\/worddetail\/baozi\/5826\/3\/1\" target=\"_blank\" rel=\"noopener noreferrer\">\u5305\u5b50<\/a> (b\u0101o zi) than dumplings. Before steaming, the top of the dumpling is twisted, which gives it a particular and unique design. \u5c0f\u7b3c\u5305 (xi\u01ceo l\u00f3ng b\u0101o) are often filled with pork and sometimes crab meat. Inside, you often find a &#8216;surprise&#8217; soup that is hotter than the sun, so careful when you take a bite! A less healthy alternative to the \u5c0f\u7b3c\u5305 (xi\u01ceo l\u00f3ng b\u0101o) is known as the <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E7%94%9F%E7%85%8E%E5%8C%85&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u751f\u714e\u5305<\/a> (sh\u0113ng ji\u0101n b\u0101o), a fried dumpling filled with minced pork.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E5%8C%97%E4%BA%AC&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u5317\u4eac<\/a> (b\u011bi j\u012bng) &#8211; Beijing<\/h2>\n\n\n\n<p>Cuisine in the northern part of China often involves a lot of foods made from wheat such as <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E9%A5%BA%E5%AD%90&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u997a\u5b50 <\/a>(ji\u01ceo zi) dumplings, <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E5%8C%85%E5%AD%90&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u5305\u5b50<\/a> (b\u0101o zi) steamed buns and noodles.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"499\" height=\"333\" src=\"https:\/\/i0.wp.com\/www.writtenchinese.com\/wp-content\/uploads\/2015\/09\/b3da1f2a34be51f23057246492592b4a-e1461743872265.jpg?resize=499%2C333&#038;ssl=1\" alt=\"Peking Duck Chinese Dish\" class=\"wp-image-4227\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">7.<a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E5%8C%97%E4%BA%AC%E7%83%A4%E9%B8%AD&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\"> \u5317\u4eac\u70e4\u9e2d<\/a> (b\u011bi j\u012bng k\u01ceo y\u0101) &#8211; Peking Duck<\/h3>\n\n\n\n<p>Beijing duck is one of China\u2019s most well-known dishes and has been served for centuries. The thin and crispy skin makes is especially delicious (my weakness!). Duck meat combined with spring onions, cucumber some hoisin sauce and rolled in a pancake, what could be better?<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"498\" height=\"298\" src=\"https:\/\/i0.wp.com\/www.writtenchinese.com\/wp-content\/uploads\/2015\/09\/71e3a1323c677059c82299eec0fe7e5d-e1461743556897.jpg?resize=498%2C298&#038;ssl=1\" alt=\"Tomato and Egg Chinese Dish\" class=\"wp-image-4233\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">8. <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E7%95%AA%E8%8C%84%E7%82%92%E9%B8%A1%E8%9B%8B&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u756a\u8304\u7092\u9e21\u86cb<\/a> (f\u0101n qi\u00e9 ch\u01ceo j\u012b d\u00e0n) &#8211; Tomatoes and scrambled eggs.<\/h3>\n\n\n\n<p>Friends of mine make this dish every time I visit them because this is genuinely one of my favourite Chinese dishes. It\u2019s so simple and tasty! It&#8217;s kind of become my comfort food in China! Fried tomatoes with scrambled egg and sometimes a bit of sugar, this dish is super easy to make at home too.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"499\" height=\"361\" src=\"https:\/\/i0.wp.com\/www.writtenchinese.com\/wp-content\/uploads\/2015\/09\/shreddedpork-e1461744467973.png?resize=499%2C361&#038;ssl=1\" alt=\"Shredded Pork Chinese Dish\" class=\"wp-image-4229\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">9. <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E4%BA%AC%E9%85%B1%E8%82%89%E4%B8%9D&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u4eac\u9171\u8089\u4e1d<\/a> (j\u012bng ji\u00e0ng r\u00f2u s\u012b) &#8211; Shredded pork with bean sauce<\/h3>\n\n\n\n<p>Stir-fried pork strips and vegetables in a sweet bean sauce is another great dish from Beijing. It&#8217;s usually served with leek or onion and wrapped in a pancake. I can\u2019t help but think that Beijing is on the right track with this pancake thing\u2026<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E6%B1%9F%E8%8B%8F&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u6c5f\u82cf <\/a>(ji\u0101ng s\u016b) &#8211; Jiangsu<\/h2>\n\n\n\n<p>Located in the south-west of China, Jiangsu or <a href=\"http:\/\/dictionary.writtenchinese.com\/#sk=%E8%8B%8F%E8%8F%9C&amp;svt=pinyin\" target=\"_blank\" rel=\"noopener\">\u82cf\u83dc<\/a> has a variety of types of cuisine.
